Miss Casey's Garden Potatoes :)

2 Large Baking Potatoes
1 bag frozen chopped brocclli
1 pkg ranch dip mix
1 16 ounce sour cream
shredded cheddar cheese for topping

Turkey Stroganoff

1 lb. ground turkey (you can also use beef, i just like turkey b/c its more healthy)
1 can cream of mushroom soup
1 8 0z tub of sour cream
1 pkg Egg noodles
1 cup sliced mushrooms
3 tsbp chopped garlic
worschester sauce
A1 sauce
salt & pepper to taste

Cook Egg noodles according to package, drain and set aside. mix A1 sauce and as much worschester sauce as you like in with the ground turkey. Brown turkey then drain. Saute sliced mushrooms and garlic in olive oil. Add to ground turkey. Now add the can of mushroom soup to meat mixture. let simmer then add sour cream. simmer until sour cream is melted then let simmer 5 more minutes. Add egg noodles and dinner is done!

This was great the next day heated too...there was plenty for leftovers the next night :)

Creamy Chicken Enchiladas!

This was soooo easy!

3 Chicken breasts
1 can enchilda sauce
1 can green chiles
1 pkg cream cheese
1 pkg shredded cheddar cheese
1 pkg soft tortillas

Just cook the chicken, shred it, then add the cream cheese and chiles all in a skillet. Let that simmer until the cream cheese is melted. Spray baking pan with oil, then take tortillas and lightly brown them in a frying pan. Fill tortillas with chicken mixture, roll, and place side by side in dish. Pour enchilda sauce over them, them top with the shredded cheese. Viola!
